Ingredients (serves 2)

1/2 cup  Left over meat – eg ham turkey, chicken, sausages

2 large zucchinis

1 carrot or sweet potato (or an extra zucchini)

3 Tbs Pesto

½ cup cherry tomatoes

1 tsp olive oil

wedge of lemon to serve (optional)

  1. Make Zoodles using a mandolin slicer, spiraliser or cut thinly with a sharp knife
  2. heat oil in frypan, once hot add in zoodles.
  3. Once starting to heat up, add a tbsp. of water and gently stir using tongs until zoodles soften slightly
  4. Add in pesto and stir through gently, then add cherry tomatoes and meat to heat through
  5. Serve with lemon if desired

Variations –  add in any leftover vegetables e.g. roast veg or steamed broccoli or cauliflower

Gluten Free –  check pesto label, Dairy Free – check pesto label (can omit pesto and add herbs),  Vegetarian – substitute meat for tinned chickpeas
