1 can Brown Lentils (well rinsed and drained)

1 small onion (diced)

1 small sweet potato (steamed and roughly mashed)

1 tsp curry powder (more if you like it spicy)

⅓ cup raw cous cous

(Add ⅔ boiling water, makes 1 cup cooked cous cous) – see note

1 egg (beaten)

2 tbs chopped coriander &/or parsley

Salt & pepper to taste

Oil to fry

Sauce Ingredients

1 can Brown Lentils (well rinsed and drained)

1 tin crushed tomatoes

1-2tsp oil

1 clove garlic (crushed)

1 tsp mustard powder

1 tsp cumin powder

½ tsp ginger powder

½ tsp turmeric powder

Chilli powder to taste (optional)

S & P to taste

Note:

  • How to make cous cous, in a bowl place the raw cous cous, top with boiling water, cover and let sit for a few minutes. Once all liquid absorbed fluff cous cous with a fork, it is now ready to use.
  • There are 2 options for cooking the onion… if you are in a hurry, you can skip cooking onion and add it into the mix raw, it will heat through when the patty is cooking. For optimal flavour follow method below in step 2

Method:

  1. Make the sauce first to allow time for the flavours to develop. In a pan, heat oil then fry onion, garlic, when almost done, add in the powdered spices and stir through to heat. Add in the can of tomatoes and turn down to a low heat to simmer.  If you prefer the sauce thick, you can blend with a stick blender once cooked.
  2. To make the lentil patties heat oil in pan, cook onion until translucent, add curry powder to heat through.  Add the cooked onion mix to your mixing bowl.  Add in cooked sweet potato and roughly mash with a fork.  Add to the mix drained lentils, cous cous, egg, herbs and salt and pepper. Mix all ingredients together and allow to sit for 10 mins.
  3. Heat oil in fry pan, makes 6 patties (size of large ice-cream scoop), and fry in the oil until brown, very gently flip the patties to cook on the other side.  Serve with the warm tomato sauce and steamed greens. Delicious reheated.
